Mixed Mushroom Pasta
Porcini mushrooms are extremely popular in Italy and many regions hold festivals in the fall when porcini are plentiful using this hearty, earthy mushroom in every dish imaginable.
This pasta sauce recipe uses a mix of fresh portobello and dried porcini mushrooms and is best served on hard, short pasta such as rigatoni, penne, or an artisan pasta such as trenne pasta.
When shopping for dried porcini, look for pale colored stems with light brown caps. The dried porcini should also have a light mushroom aroma rather than a yeastlike smell.
It is an unwritten rule that you do not mix cheese with seafood, spicy dishes, or mushroom based pastas but I like a little grated Parmesan cheese on this pasta.
Here's the recipe for you to try.
Ingredients
- 3 cups mixed mushrooms, chopped (white, portobello, shiitake, etc.)
- 1 medium onion, diced
- 1/4 cup butter
- 5 cups white rice, cooked
- soy sauce, to taste
- salt & freshly ground black pepper
- 1/2 cup green onion, sliced
Directions:
- In a large skillet saute mushrooms and onion in butter until soft.
How to serve finger food
- Morsels should be small enough to be eaten in one mouthful.
- Check the temperature. Hot food doesn't mean hot enough to burn your tongue.
- if you are putting out communal food platters, such as antipasto or tapas, be sure to supply toothpicks or mini-forks. And provide an empty bowl for the used forks, olive stones or prawn tails.
- Don's stack multilayered sandwiches in a continuous line; arrange them so that it's easy to pick out an individual serve neatly.
Chocolate Cookies
Its the Chocolate Kiss Cookies.
Here are the ingredients:
1/2 teaspoon Vanilla extract
1 package (14 oz.) chocolate kisses
1 1/4 cups Butter or margarine -- softened
1 cup Sugar
2 Eggs
3 1/4 cups All-purpose flour
The Procedure:
Cream butter; slowly add sugar, beating it until it is light and fluffy. Add the eggs and then vanilla; blend it well. Then stir in the flour.
2.) Press the dough from a cookie press two inches apart onto an ungreased cookie sheets, using a star or using a daisy shaped disc.
3.) Bake in the oven at 375 degrees F. for about 10 minutes. Then press a chocolate kiss into the center of each of the warm cookies, with the point side up. After they are done remove them to a wire rack and let them cool. The yield is six dozen cookies.

Apple Pancakes For You!
Here are the ingredients:
1 C flour
2 T sugar
1 tsp. cinnamon
1/8 tsp. nutmeg
1/2 tsp. salt
1 egg
1 C milk
1 T vegetable oil
4 large apples, peeled and thinly sliced.
In a large bowl, combine dry ingredients.
In another bowl, combine wet ingredients, minus the apple. Add to dry ingredients and mix until smooth. Gently fold in the sliced apples.
Heat skillet over medium heat. You can tell if your skillet or griddle is hot enough by flicking a drop or two of water on its surface. The water should skitter around and quickly evaporate if the pan is hot enough.Pour batter onto a lightly greased hot griddle or skillet 1/2 cup at a time and spread to form a 5-inch circle.
Cook pancakes for about 1 1/2 - 2 minutes. Turn when bubbles form (see photo) and continue cooking until golden brown and apples are tender. Sprinkle with confectioners' sugar if desired.
Serve immediately or keep warm on a baking sheet in a 200° F oven until all pancakes are cooked.
Tips To Help Flatten Stomach
